After holding his own with heavy dramatic material up against incredibly talented actors, Pollak went on to co-star in the films Grumpy Old Men and Grumpier Old Men opposite Walter Mathau and Jack Lemon. After the box office success of these two films, Pollak took a risk on an independent project written and directed by unknowns Christopher McQuarrie and Bryan Singer. The film, starring Kevin Spacy, Bennicio Del Toro, Chaz Palmeteri and Stephen Baldwin, was called The Usual Suspects. After an unbelievable successful premiere at the Cannes Film Festival, it went on to win two Academy Awards. Pollak followed this success up with a role in the Martin Scorsese film Casino, where he played opposite Robert DeNiro, Joe Pesce and Sharon Stone. Again Pollak was associated with yet another Academy Award winning film.
